Sagu with wine or juice is a traditional dessert from the South of Brazil, especially Rio Grande do Sul. Made with tapioca pearls cooked in full-bodied grape juice or sweetened red wine and flavored with spices, it results in a dessert with a vibrant color, unique texture, and distinctive flavor.

The translucent tapioca pearls acquire a beautiful purple color from the grape juice and become soft and subtly sweet. It's an elegant dessert, perfect for special occasions!

📜 The History of Sagu

Sagu arrived in Brazil through European immigration, especially German and Italian, in the 19th century. Tapioca starch, extracted from the pith of certain palm trees, was widely used in European cuisine and was adapted by immigrants who settled in Southern Brazil.

In the Serra Gaúcha region, the recipe took on the version with red wine or full-bodied grape juice, taking advantage of the region's strong winemaking tradition. What was once a simple, resourceful recipe transformed into a sophisticated dessert, served at Sunday lunches, parties, and family celebrations.

Today, sagu with wine is considered a gastronomic heritage of Rio Grande do Sul, found in traditional restaurants and on the tables of families who keep the tradition of their immigrant ancestors alive. The recipe has been passed down through generations, with each family adding their special touch through spices.

To make authentic sagu with wine, you will need:

  1. Cook the tapioca: In a large pot, bring 1 liter of water to a boil. Gradually add the tapioca, stirring constantly to prevent sticking. Cook over medium heat for 15-20 minutes, stirring occasionally, until the pearls become translucent (with only a small white dot in the center).
  2. Drain and rinse: Drain the tapioca in a sieve and rinse under cold running water to remove excess starch. Set aside.
  3. Prepare the broth: In the same (clean) pot, combine the full-bodied grape juice, sugar, cinnamon sticks, whole cloves, and orange peel (if using). Bring to medium heat and boil for 5 minutes to allow the spices to release their aroma.
  4. Add the tapioca: Add the cooked tapioca to the grape broth. Cook over low heat for another 10-15 minutes, stirring occasionally, until the tapioca absorbs the color and flavor of the juice.
  5. Adjust sweetness: Taste and adjust sugar if necessary. Remember that the tapioca will be less sweet once chilled.
  6. Remove spices: Remove the cinnamon sticks, cloves, and orange peel.
  7. Let cool: Transfer to a serving dish or individual glasses and let cool. Refrigerate for 2-3 hours before serving.

 

🍷 Tips to make your sagu even better

  • Tapioca consistency: The tapioca is done when the pearls become translucent. A small white dot in the center is normal and will disappear during the final cooking.
  • Prevent sticking: Stir the tapioca regularly during cooking to prevent it from sticking to the bottom of the pot.
  • Fresh spices: Use cinnamon sticks and whole cloves for a more intense aroma. Avoid using powdered spices, as they can cloud the broth.
  • Wine version: You can substitute half of the grape juice with dry or sweet red wine for a more traditional and adult version.
  • Ideal consistency: The sagu should have a thick syrup consistency, not too liquid or too dry. If it gets too thick, add a little more juice.
  • Citrus touch: Orange peel adds a special aroma and balances the sweetness. Use only the orange part, avoiding the bitter white pith.
