🧀 What is Minas Gerais Cheese Bread (Pão de Queijo Mineiro)?

Pão de queijo is one of Brazil's most beloved snacks, originating from Minas Gerais. Made with sour and sweet tapioca starch, cheese, eggs, and milk, it results in small balls that are crispy on the outside and soft on the inside. It's perfect for breakfast, an afternoon snack, or as a side dish for meals.

The combination of sour and sweet tapioca starch is the secret to the perfect texture: crispy on the crust and soft on the inside!

🛒 Ingredients (available at Link Brazil)

To make authentic Minas Gerais cheese bread, you will need:

👩🍳 Preparation Method

  1. Scald the tapioca starch: In a saucepan, boil the milk with the oil and salt. Pour this hot mixture over the tapioca starches (sour and sweet) in a large bowl. Mix well until a homogeneous dough forms.
  2. Let cool: Wait for the dough to cool until it is lukewarm (you should be able to touch it without burning).
  3. Add the eggs: When the dough is lukewarm, add the eggs one by one, mixing well after each addition.
  4. Add the cheese: Add the grated cheese and mix until completely incorporated.
  5. Shape the balls: Grease your hands with oil and form walnut-sized balls. Place them on a greased baking sheet or one lined with parchment paper, leaving space between them.
  6. Bake: Bake in a preheated oven at 180°C for 25-30 minutes, or until golden and crispy.

🍶 Tips to make your cheese bread even better

    • Freeze before baking: You can shape the balls and freeze them. When you want to eat them, bake directly from the freezer (add 5 minutes to the oven time).
    • Cheese blend: Try combining meia cura cheese with Parmesan for a more intense flavor.
    • Perfect texture: The 50/50 ratio of sour and sweet tapioca starch ensures the ideal texture. Do not substitute one for the other!
    • Toothpick test: The cheese bread is ready when it is golden and a toothpick inserted comes out clean.
    • 🍇 Classic Minas Gerais combination: Serve the hot cheese bread with Predilecta Goiabada Cascão! The combination of cheese with guava paste (known as "Romeo and Juliet") is one of the most beloved combinations in Brazilian cuisine. The sweetness of the guava paste contrasts perfectly with the savory taste of the cheese. Try it!

💡 Finishing tip: Serve it hot to enjoy the crispy crust! 🌟
